Flaxseed Bread

This recipe comes from Anna Katz.

Ingredients Dry:

  • 200 grams (slightly less than ½ lb.) of ground flax seeds (grind it in a coffee grinder)

  • ½ - 1 tsp. baking soda

  • ½ tsp. salt

  • some cumin or sesame to taste

Liquid:

  • 2 eggs

  • 100 grams coconut milk (can be replaced with almond or other nut/vegetable milk)

  • 2 tsp. apple cider vinegar

Preparation

  1. Mix all dry ingredients. Separately mix liquid ingredients. Mix liquid and dry ingredients together. It will turn into a thick dough. If the dough is not thick enough, you can let it stand or add more flax seed flour. You can also pour the dough the mold right away and let it thicken in the mold.

  2. Put the mixture into a mold or with wet hands form a loaf of bread. Don't fill the mold too high, it will not bake through. Lightly smooth with some water and sprinkle with your favorite seeds. Let the dough stand for 10-15 minutes.

  3. Put the formed/molded dough in the oven and bake at 350 degrees until baked through. The bread is ready when a match inserted into the dough stays dry.
