Ingredients:
- аpprохimately a 3lb whole chicken, or other type of meat with bones (feel free
to add some offal/organ meat)
- 3 liters of water
- 7-10 quarter size slices of ginger
- 1 large onion
- 3 clove of garlic
- 3 bay leaves,
- peppers of your choice (red, black, etc.), other spices to your taste
Herbs for the soup:
- 2 tbsp. Goji berries (Gou Qi Zi)
- 3 Red dates (Da Zao Hong)
- 5 pieces Codonopsis (Dang Shen), 20g
- 3 slices Chinese wild yam (Shan Yao), 20g
- 2 tbsp. Astragalus root (Huang Qi) or 4 pieces, 20g
- ½ cup Chinese barley, Job’s tears (Yi Yi Ren)
Instructions:
1. Soak all the herbs except red dates and goji berries in a large bowl with
enough water to cover. Set aside for 30 minutes.
2. Cut chicken into pieces and blanch in a pot of boiling water with 3-4 slices
of ginger. This process helps to remove the dirt and blood water from the
bones. Pick the chicken pieces out and transfer them to a soup pot.
3. Add water up to 3 liters. Place onion, garlic, ginger, other spices, and the
soaked herbs. Bring to a boil and then simmer for 30 to 40 minutes. Add
red dates, goji berries and honey dates, continue simmering another 30
minutes.
4. Add salt to your taste and fresh chopped cilantro before serving.
