Sweet Potato Salad

A simple recipe that can be eaten warm or at room temperature.


Ingredients: - 2 Large sweet potatoes - 6 Hard-boiled eggs - Cooked chicken, beef, or organic ham - about ¼ lbs or more according to your taste - Organic mayonnaise - Homemade sauerkraut OR 6 medium-sized pickles (we recommend semi- sour Kosher dills) - Salt and black pepper to taste Preparation: - Peel 2 sweet potatoes and cut into bite-sized pieces - Boil cut sweet potatoes until they are soft, then drain the water - Hard boil, peel and cut eggs into small pieces - Chop pickles into small pieces or prepare 1 cup of sauerkraut - Mix all ingredients with mayonnaise according to your taste preferences. - Add salt and pepper if desired (optional).
